Individual Upside-down Pineapple Cake’s
Sometimes I just crave something sweet, this individual upside-down pineapple cake is perfect.
It makes 6 individual servings if using this Jumbo Muffin Pan. Can we talk about how cute they turn out because they are the perfect size to hold one pineapple ring. I have made these for hosting a dinner party and during the week just for myself! They are simple and contain everything you have on hand.
Ingredients:
2 eggs
2/3 cups sugar
4 TBSP Pineapple juice (from can)
2/3 cups flour
1 TSP baking powder
1/3 TSP salt
Topping:
¼ cups butter
2/3 cup brown sugar (packed)
1 can pineapple rings
6 maraschino cherries
Instructions:
1. Preheat oven to 350 and spray Jumbo Muffin Pan with non-stick spray.
2. Mix together eggs, sugar and pineapple juice with a whisk.
3. Fold in flour, baking powder and salt. Continue to mix for about 1 minute.
4. Over medium heat melt topping, butter and brown sugar on low for about 2 minutes. Once completely melted together spoon 1 TBSP of mixture into the sprayed muffin pan.
5. Add one pineapple ring to each muffin tin and place one maraschino cherry in the middle.
6. Carefully spoon cake mixture on top of the pineapple rings. Bake for 20-22 minutes until done.
7. Store in airtight container, heat in the microwave for 20 seconds prior to eating.
