Sunday I meal prep for the week, I keep a note in my phone during the week with what I am going to eat for breakfast, lunch, dinner and snack each day. This helps me eat what I have on hand and not waste food. It also makes it easier for logging my food in myfitnesspal which is helping me lose some weight. In addition to making freezer breakfast sandwiches and overnight oats I often make these spicy sausage veggie rice bowls.

One package of Italian sausage, a bag of mixed veggies and some instant rice makes they quick and easy to assemble. For the life of my I have not yet learned how to make rice and it not stick to the bottom of the pot so I buy Seeds of Change Organic Quinoa & Brown Rice pouches. I prefer these because there are only two servings per pouch so I can have some variety while still meal prepping. These are such an easy meal prep option. In less than 30 minutes you can have 4 meals ready to go, the prep time is only about 5 minutes.

Instructions:

  • Slice Italian suage into ¼ inch slices
  • Add to air fryer and cook for 6-8 minutes, mixing halfway though
  • Add onion and veggies mix well.
  • Air fry for 12-15 min again mixing halfway through.
  • Cook rice according to package instructions, separate into 4 meal prep containers.
  • Top rice with sausage & veggies.
  • Refrigerate to enjoy during the week!
