I am still in my pumpkin spice era. I took these to a tailgate and everyone raved about them so naturally I took them to Halloween also.
I love white chocolate and the hint of pumpkin spice is so perfect!
Ingredients
3 cups all-purpose flour
2 TSP pumpkin spice
1 TSP baking soda
1 TSP Salt
1 cup room temperature butter
1 cup packed brown sugar
½ cup granulated sugar
2 eggs room temperature
2 TSP vanilla extract
1 cups white chocolate chips
1 cup pumpkin spice chips
Instructions:
1. Preheat oven to 375 and line a Baking Sheet with Parchment Paper
2. Add flour, pumpkin spice, baking soda, salt in a bowl. Set aside
3. In a stand mixer add butter, brown sugar and sugar mix on medium until light and fluffy. Be sure to scrap the sides.
4. Add in vanilla and eggs and mixing again.
5. Turn stand mixer to low and slowly add all dry ingredients. Once completely mixed add white chocolate chips and pumpkin spice chips and mix with a spatula.
6. Using a Cookie Scoop place about two tablespoons of dough onto the prepared Baking Sheet leaving two inches between each ball.
7. Bake for 10-12 minutes until edges are golden brown.
8. Remove, let sit on Baking Sheet for about 3 minutes before transferring to a Cooling Rack
