This perfect mini carrot cake recipe makes 6 jumbo muffin sized carrot cakes.
My grandma was the only person I knew who liked carrot cake, so I never really tried it. However, I recently decided that I love carrot cake! Especially because everyone has a different take on it, and it’s different every time you order it from a restaurant. It’s one of my favorite things to order, next to upside-down pineapple cake. When I lived in Kansas City, I would go to Jack Stack’s and order the Carrot Cake before dinner because it comes out hot and covered in walnut frosting. At that moment, I knew I was going to be on the hunt to try carrot cake everywhere else and find out what the best parts are.
These are pre-made individual servings, which makes them perfect for dinner parties, family functions, or even a date night. They are jumbo muffin-sized, which makes them a larger dessert. Is that something you would complain about?
I don’t have time to shred carrots; that seems like a lot of unnecessary work. I make these with pre-washed, bagged shredded carrots sold in the produce section. I am a big fan of working smarter, not harder!
