Sometimes I find eggs on sale or get a coupon or forget to eat them before they expire. I make freezer sandwiches when this happens!
Ingredients:
8 eggs
6 slices of cheese
1 package deli meat (4 slices per sandwich/serving size)
6 English muffins
Instructions:
1. Spray 9×13 pan with nonstick cooking spray and preheat oven to 325 degrees
2. Mix eggs in a bowl and pour into pan, bake for 15 minutes until center is set
3. While eggs are cooking split the muffins in half, layer deli meat and cheese.
4. Cut eggs into 6 pieces and lay on top on cheese, assemble top of muffin and wrap in paper towel and plastic wrap. Add all sandwiches to a freezer bag and freeze.
5. Enjoy!
To reheat: remove plastic wrap, wrap in paper town and place in microwave. Defrost for 30 seconds then flip and do it for another 30 seconds. Heat on regular heat for 40 seconds to one minute.
