Donut Banana Muffins
This sweet banana muffin recipe perfectly makes 12 standard size muffins. I refer to them more as a fall apple cider donut type muffin because of the optional cinnamon sugar topping you put on top after they are cooled. These are made with banana’s which is a great way to use up those overly ripe bananas’ currently sitting on your counter! My mom has beyond mastered banana bread, while it is probably one of my favorite things, I like these because I have no self-control. I’m not kidding, a loaf of banana bread will not last in my house I just slice a small piece off every time I walk into the kitchen. A single muffin mentally tells me I had my serving and I shouldn’t eat another one until tomorrow. There are worst things to worry about though it’s just so tasty especially when enjoyed with a hot beverage!

Since you know I like to freeze everything, yes you can freeze these in a single layer container prior to putting the cinnamon sugar topping on. When you want one or two just take them out and let them thaw on the counter. Add the topping at the time and enjoy with your morning coffee.

Ingredients:
2/3 cups sugar
½ cup vegetable oil
2 large eggs
2/3 cups mashed ripe bananas (about 2 medium)
1 TSP vanilla
1 2/3 cups flour
1 TSP baking soda
1 TSP cinnamon
½ TSP salt

Optional Topping:
6 TBSP butter
¼ cups sugar
½ TSP cinnamon

Instructions:
1. Preheat oven to 375 and spray standard muffin pan with non-stick spray or use muffin liners/Parchment Paper
2. In stand mixer add banana’s, sugar, oil, eggs and mix on medium until well incorporated.
3. Add vanilla and continue to mix.
4. Slowly add flour, baking soda, cinnamon and salt. Mix well.
5. Pour into prepared muffin pan and fill each muffin to ¾ of the way.
6. Bake for 18-222 minutes, until you inset a toothpick and it comes out clean.
7. Remove from pan and allow too completely cool.
8. Melt 6 TBSP of butter
9. Mix sugar and cinnamon in separate bowl
10. Dip the top of the muffin in butter then repeat in the sugar and cinnamon
11. Repeat for all 12 muffins, store in an air tight container
