Nana’s Banana Bread
Every week I go grocery shopping, every other week I decide to eat my banana’s so needless to say I have so many frozen banana’s. I will never complain about this, I use them for bread, muffins, smoothies, slice them and pan fry them for an extra sweet treat. The options are endless. I grew up with homemade brownies, cookies anything sweet but my mom’s homemade banana bread was by far the best! The great thing about banana bread is that you can add nuts, chocolate chips, strawberries, blueberries. There are so many options to mix up a simple and delicious recipe. My favorite way is with crushed walnuts.
This recipe will make one regular loaf of bread of 4 mini loaf’s. This Mini Loaf Pan is amazing for making smaller loafs (4) and is easy to clean. The cook time will change from 60 minutes to about 40-45 minutes.

Ingredients:
1 cup sugar
1/2 cup shortening
3 medium ripe banana’s (1.5 cups mashed)
1 TSP baking soda
1/2 TSP baking powder
1 3/4 cup flour
Optional 1 cup chopped walnuts

Instructions:
1. Spray loaf pan with non-stick spray and preheat oven to 350 degree’s
2. In a stand mixer add mash bananas, shortening and sugar and mix until fully incorporated.
3. Add leveled flour, baking soda, baking powder and mix on low.
4. Fold in chopped walnuts (optional)
5. Bake for 60 minutes at 350 degree’s

Note:

You can also make these into muffins, this recipe will make 12 standard muffins. Bake at 375 degrees for 30-35 minutes.
